Homemade Lemon Curd is really a scrumptious invention... butter, sugar, eggs, whipping cream, fresh squeezed lemon juice and just-off-the-lemon zest. In England, its often served with shortbread... and so it is here, on a delightfully buttery, not-too-sweet, just- crunchy-enough shortbread crust. Topped with a swirl or a squiggle of powdered sugar (just enough of a good thing!) These are really good straight out of the bakery box, and maybe even better out of the fridge.
